We take a lot of pride in our wine, and because of that we are constantly learning new ways to produce high quality wine. With this latest vintage we borrowed a technique from Beaujolais, France known as carbonic maceration. This technique converts malic acid into alcohol using enzymes already present in the grape. This creates a red wine which is softer, more fruit forward and produces more unique flavors not seen in typical winemaking processes.
Our first attempt at this technique with this vintage produced a wine which is, dry, medium bodied and satin smooth with supple tannins. This wine has rich and intense flavors of black current, raspberry and hints of strawberry with a longer and persistent finish.
